White Chocolate Peanut Toffee

Using a simple mix of sugar, water and butter (lots of butter!) we cook this recipe to just the right temperature for our altitude and then finish with a pinch of salt and a splash of vanilla. Then each side gets covered in Belgian white chocolate and topped with a mix of raw and roasted peanuts for wonderfully sweet and somewhat salty coating for the traditional toffee (sometimes called a butter crunch because, yum - so buttery and so crunchy!)
